
Whipped Cream
Whipped cream sweetened with natural honey, either infused with cannabis or not, makes a perfect accompaniment to this galette. If new to you, here are a few helpful suggestions.Cream is offered for sale as whipping cream and heavy cream.Heavy cream has more milk fat, 36%, instead of the 30% that whipping cream has. The more fat the more structure you’ll achieve when whipped.When whipping cream and using honey to sweeten, you need to help the cream to stabilize when whipped. If not it will slowly start to weep out liquid and eventually lose the air bubbles that have been whipped into it.To stabilize, many recipes call for a thickener. Cream of tartar is the most suggested, and it works fine however it can add unwanted flavors.Honey, a natural sweetener, also needs a structural aid. Professionals have found gelatin works the best. Gelatin will keep liquid from weeping for a day, if kept well chilled in a covered bowl in the refrigerator or, better yet, in the freezer. If any weeping occurs, when ready to serve you can whisk it back into shape. Gelatin contributes no additional flavors, and doesn’t noticeably change the texture of the whipped cream.

Ingredients
- 2 cups heavy whipping cream
- 2 tablespoons honey (If using infused, adjust quantity based on desired medicinal strength.)
- 1 tablespoon unflavored gelatin (If vegan is what you’re after, agar powder is a gelatin made from seaweed.)
Instructions
- Chill bowl and beaters for 20 minutes in freezer; make sure cream is ice cold to produce the most textured whipped cream.
- Place gelatin in ¼ cup of cold water, let sit for 2 minutes to bloom. Microwave it a few seconds at a time until the gelatin becomes liquid. Stir, and then set aside or in fridge to cool.
- Beat whipping cream on medium-high until it starts to thicken.
- Add honey and cooled gelatin; continue beating on high until cream reaches desired consistency.
Notes
Serving suggestions: If serving immediately, spoon into chilled serving bowl allowing guests to scoop their own—if infused, be sure to notify all guests! Alternately: Spoon into pastry bag and pipe edges of galette or whatever your creative sprite motivates. Do enjoy!
